The Cleveland KDL-100 is a high-capacity, steam-jacketed kettle designed for efficient, high-volume production. With a 100-gallon (375 L) capacity, it can prepare approximately 1,600 eight-ounce servings per batch, making it ideal for commercial kitchens that specialize in soups, sauces, pasta, braises, and other high-acid food products. Its open tri-leg base, 316 stainless steel liner, and 2/3 steam jacket construction ensure durable, uniform heating for consistent results. Installation Requirements:
- The machine requires a direct, clean steam supply at 5-45 psi pressure.
- The condensate return line should have a minimum 3/4" NPT connection, and it is recommended to use a valve size at least 1" larger to connect to a floor drain.
- The machine should be securely mounted on the provided flanged feet to a level, non-combustible floor. Allow at least 4 inches of clearance at the rear and 0 inches on the sides.
- Ensure adequate ventilation is provided to manage the ambient heat and humidity generated by the machine.
