Product Description
The John Boos BAK03 is a durable and versatile work surface designed for high-volume bakeshops and pastry kitchens. The edge-grain maple top provides a sturdy work surface, while the stainless steel base offers effortless mobility. The integrated pan rack allows for convenient storage and organization of your baking sheets. This all-in-one solution is equipped with casters and a 4-inch riser, making it easy to move and adjust to your needs. Additional storage options, such as drawers, overshelves, and pot racks, are also available upon request.
Key Features:
- The work surface is made of 1-3/4" thick edge-grain Northern Hard Rock Maple, which is durable, knife-friendly, and naturally antimicrobial.
- The surface has a food-safe penetrating oil finish, with a varnique finish available by special order.
- The 4" coved riser on the back and ends keeps flour, dough, and utensils on the table.
- The base, legs, gussets, undershelf, and pan rack are all made of Type 300 stainless steel, which is corrosion-resistant and easy to sanitize.
- The bun pan rack can hold 8 full-size 18" x 26" sheet pans, making it ideal for staging dough or cooling products.
- The station has six non-marking 5" heavy-duty locking casters, allowing it to be rolled wherever production demands and locked firmly in place.
- The undershelf is fixed 12" above the floor, providing space for bulk ingredient bins or small equipment.
- The station ships knocked-down (KD) for reduced freight costs and is easy to assemble on site.

Care & Maintenance:
- Clean the maple top by wiping it with mild soap and water. Re-oil the top regularly to keep it moisturized and prevent stains.
- Clean the stainless steel components with a non-chloride cleanser, such as Bar Keepers Friend, and a soft cloth or plastic scouring pad.
- Avoid using bleach, abrasive powders, or steel wool to maintain the satin finish on the stainless steel components.
