The Cleveland Range 36-DM-K66 offers a high-capacity solution in a compact 36-inch footprint. Featuring two 6-gallon, 2/3-jacketed kettles mounted on a heavy-duty modular base, it's ready to connect directly to your in-house steam line. With fast, even heating and effortless manual tilting, the 316 stainless steel liner enables plating up to 320 four-ounce servings per batch while freeing up valuable kitchen space. Utilities & Clearances:
- The appliance should be placed under a hood with enough fresh air supply.
- Maintain a clearance of 3 inches (76 mm) on the rear and sides to allow for servicing.
- Do not use PVC (polyvinyl chloride) for the drain line. Instead, use 1 1/2 inch IPS (iron pipe size) copper or stainless steel.
- The feed water should have the following specifications: - Hardness: 50-200 parts per million (ppm) - Total Dissolved Solids (TDS): 50-250 ppm - pH: 7.0-8.5 (as per Cleveland's recommendations)
