Product Description

The DOME51R pizza oven, hand-built in Italy for Univex, brings authentic, old-world craftsmanship to high-volume kitchens. Its thick insulation surrounds a handmade firebrick dome, locking in heat so efficiently that the exterior remains cool to the touch, even at pizza-perfect temperatures. Capable of baking up to 9 x 12-inch pizzas per batch, this 51 ¼ " diameter oven is an ideal solution for bustling pizzerias, brewpubs, and hotel kitchens, keeping the pies and profits flowing.

Standard Equipment:

  • The oven features a handmade firebrick dome and a stationary cooking floor.
  • The gas connection is 3/8" NPT, suitable for either natural gas or propane.
  • The oven is mounted on a black iron stand.
  • The oven has an iron door.
  • A built-in thermometer displays the temperature in both Fahrenheit and Celsius.
  • The oven has an internal stack exhaust with a diameter of 7.87 inches.

Installation & Utilities:

  • The oven must be placed on a level, non-combustible floor with a minimum clearance of 32 inches on the sides and rear, and 40 inches in the front.
  • Provide a dedicated natural-draft flue for the oven. If a fan is required by local code, limit the airflow to between 200 and 300 CFM.
  • The minimum ventilation opening beneath the oven must be at least 31 square inches (200 square centimeters).
  • Leave enough access room on all sides of the oven for service personnel to perform maintenance and repairs.
