Product Description

The Univex DOME55GV is a hand-built, gas-fired pizza oven with an 11-pie capacity and a 55 ⅛-inch round stone hearth. Crafted in New Hampshire, this oven combines traditional firebrick construction with modern gas efficiency, producing authentic, blistered-crust pizzas. The heavily insulated dome maintains a cool exterior, making it ideal for open-kitchen settings and high-volume service. Installation & clearance requirements:

  • Maintain a minimum clearance of 6 inches (15.2 cm) from the sides and back, and 16 inches (40.6 cm) from the top to any combustible materials.
  • Place the oven on a non-combustible floor, allowing for at least 32 inches (81.3 cm) of clearance around the oven and 40 inches (101.6 cm) in front of it.
  • Provide at least 31 square inches (200 cm²) of open area beneath the stand to allow for proper combustion air.
  • It is recommended to use a dedicated natural-draft flue. If an exhaust fan is required, it must not exceed 300 CFM.
  • Ensure sufficient access on all sides to allow for routine service.
