To maintain the maple top, re-oil it with John Boos Mystery Oil or a food-grade mineral oil whenever the surface appears dry. Clean the stainless frame with a non-chloride stainless steel cleaner and a soft cloth, avoiding abrasive pads or bleach. Wipe up spills promptly and avoid leaving standing water on the wood or metal surfaces.
