Overview

The CHEFTOP MIND.Maps™ CONVEX Full Size Convection Oven is an electric convection oven with right-to-left door opening (hinged left). It features touch screen controls with integrated WiFi connectivity and Data Driven Cooking.

Capacity

This oven holds any one of the following:

• (6) 18" x 26" full size sheet pans
• (12) 12" x 20" Hotel/Steam pans
• (6) GN 2/1 pans

The tray pitch is 3-1/8”.

Cooking Chamber

The cooking chamber is made of AISI 304 stainless steel.

Cooking Technology

• AIR.Plus: Multiple fans with reverse gear and 2 speed settings.
• DRY.Maxi™: Rapidly extracts the humidity from the cooking chamber.
• ADAPTIVE.Cooking™: Automatically regulates the cooking parameters to ensure repeatable results.
